Espresso is not a particular bean, roast level or drink size. It is a brewing method that uses pressure to force hot water through a compact bed of finely ground coffee, producing a small, concentrated beverage with a different texture and flavor intensity from most other brewing methods.

Research basis: This article draws on Specialty Coffee Association terminology and espresso-machine documentation together with the research used throughout Espresso Index. It is intended as a beginner’s explanation rather than a single fixed recipe for every coffee or machine.
What Makes Espresso Different?
The defining feature of espresso is pressurized brewing. An espresso machine pushes hot water through a bed of ground coffee held in a filter. Because the water is moving through a compact coffee bed under pressure, espresso extracts quickly and produces a concentrated drink.
The Specialty Coffee Association describes espresso as a thick, concentrated coffee brewed under pressure, generally with a higher concentration of dissolved and suspended coffee material than coffee brewed by many other methods.
That does not mean there is only one valid espresso recipe. Coffee, grinder, basket size, machine design and taste preference can all change the dose, beverage yield and extraction time that work best.
The Basic Espresso Process
- Coffee is ground finely enough to create resistance to the brewing water.
- A measured amount of ground coffee is placed into a filter basket.
- The coffee bed is distributed and, on a traditional machine, tamped.
- The portafilter is locked into the group head.
- The machine sends heated water through the coffee under pressure.
- The brewed espresso exits through the basket and into the cup.
Fully automatic machines perform many of these steps internally, but the underlying idea is still the same: grind coffee, create a controlled coffee bed and pass pressurized hot water through it.
What Is a Portafilter?
A portafilter is the removable handle-and-basket assembly used on many manual and semi-automatic espresso machines. The filter basket inside it holds the ground coffee during extraction.
The portafilter locks into the machine’s group head. Water then enters from above, passes through the coffee bed and exits through the holes in the basket.
Different machines use different basket and portafilter sizes. For example, the Breville Bambino uses a 54 mm system, while the Gaggia Classic Pro E24 uses a 58 mm platform.
Why Grind Size Matters
Grind size changes how easily water can move through the coffee bed.
- Too coarse: water may pass through too easily, producing a fast and weak extraction.
- Too fine: the coffee bed may create too much resistance, slowing the flow dramatically.
This is why an espresso-capable grinder matters. Small changes in grind setting can meaningfully change flow and extraction.
Some machines leave this adjustment almost entirely to the user. Others provide guidance. The Ninja Luxe Café Premier, for example, uses Barista Assist to recommend grind settings as part of its guided workflow.
What Does “Dose” Mean?
The dose is the amount of dry ground coffee used for a shot.
Dose needs to make sense for the basket and machine being used. Changing the dose changes the depth and resistance of the coffee bed, so it can affect how the shot flows even when the grinder setting stays the same.
Many home espresso machines are designed around a typical double-shot basket, but the correct dose should follow the basket, manufacturer guidance and the recipe being used rather than a universal number.
What Is Espresso Yield?
Yield is the amount of liquid espresso produced in the cup. Espresso recipes are often discussed by comparing the dry coffee dose with the finished beverage yield.
That relationship is usually called a brew ratio. A lower beverage yield relative to the dose produces a more concentrated shot; a larger yield produces a longer, less concentrated shot.
There is no single ratio that makes sense for every coffee. Roast level, coffee density, grinder performance, basket design and taste all influence the recipe.
What Does Extraction Mean?
Extraction is the process of water dissolving and carrying flavor compounds and other soluble material out of the ground coffee.
Espresso extraction is influenced by several variables at the same time:
- Grind size
- Coffee dose
- Beverage yield
- Water temperature
- Pressure and flow
- How evenly the coffee bed is prepared
- The coffee itself
This is why dialing in espresso involves adjusting variables rather than relying on one fixed setting forever.
How Much Pressure Does Espresso Need?
Espresso requires pressure, but a larger pump-pressure number printed on a box does not automatically mean better espresso.
Many consumer machines use pumps capable of pressures higher than the pressure intended at the coffee during extraction. What matters is how the machine regulates brewing pressure and flow through the coffee bed.
Several machines we cover, including the Breville Bambino and Gaggia Classic Pro E24, are designed around approximately 9-bar espresso extraction rather than simply applying the pump’s maximum possible pressure to the coffee.
What Is Crema?
Crema is the layer of foam that forms on top of espresso. It is created during pressurized brewing as gases and coffee compounds form a foam when the espresso exits the machine.
Crema is visually associated with espresso, but it should not be treated as a simple quality score. Coffee age, roast style, bean composition and the brewing process can all affect how much crema appears and how long it lasts.
A shot with thick crema is not automatically delicious, and a shot with less crema is not automatically poor. Taste remains more important than appearance alone.
Espresso vs. Regular Coffee
“Regular coffee” usually refers to a longer brewing method such as drip coffee, pour-over or another filter process. Those methods generally use much more water and rely primarily on gravity or immersion rather than espresso-machine pressure.

The beans themselves do not have to be fundamentally different. Coffee sold as “espresso roast” is usually roasted or blended with espresso preparation in mind, but espresso can be made from many different coffees and roast levels.
Does Espresso Require Dark-Roast Beans?
No. Darker roasts are common in traditional espresso styles, but the brewing method does not require them.
Medium and lighter roasts can also be used for espresso. They may require different grinder settings and extraction recipes because the coffee behaves differently in the basket.
Semi-Automatic vs. Fully Automatic Espresso
The coffee can still be espresso even when the machine handles the process differently.
Semi-automatic
The user prepares the coffee in a portafilter and has more direct control over grinding, dosing, puck preparation and often milk steaming.
Fully automatic
The grinder, dosing system and brew group operate inside the machine. The user selects a drink or settings and the machine performs most of the preparation.

Common Beginner Misconceptions
“A 15-bar machine makes better espresso than a 9-bar machine.”
Not necessarily. Pump capability and actual brewing pressure are different things. Pressure regulation, temperature, grinder quality and coffee preparation matter much more than the largest number printed on the machine.
“More crema means better espresso.”
Crema is part of espresso’s appearance and texture, but it is not a reliable standalone measure of flavor quality.
“Espresso beans are a special type of bean.”
No. “Espresso” describes the brewing method. Roasters may create blends or roast profiles intended for espresso, but there is no separate botanical category called an espresso bean.
“An expensive machine fixes a poor grinder.”
It cannot. On a semi-automatic setup, consistent fine grinding is one of the most important parts of controlling how water moves through the coffee bed.
What Equipment Does a Beginner Need?
For a traditional semi-automatic setup, the essentials are:
- An espresso machine
- An espresso-capable grinder, unless the machine includes one
- A portafilter and basket
- A tamper if one is not included
- A scale if you want to measure dose and beverage yield consistently
- Fresh coffee and suitable water
A fully automatic machine combines several of those functions into one appliance, which is one reason it can be easier for beginners who prioritize convenience.
